Being one of the Aegean cuisine's most famous dishes, the easy-to-make baked pumpkin recipe, known as Sinkonta, is a must try! There is too much deliciousness behind this meal; especially with the addition of Hiç Premium Extra Virgin Olive Oil.
- 90g pumpkin
- 30g red onion
- 1 clove of garlic
- 1 red hot pepper
- 1 bell pepper
- 30g tahini (crushed sesame seeds)
- 1/2 lemon
- 1/2 orange
- Hiç Premium Extra Virgin Olive Oil
Chop the pumpkin vichy style. Cut the red onion into segments. Cut the garlic into two halves. Put all the chopped ingredients into a baking tray. Add olive oil, salt, red hot pepper, the juice of half a lemon and the juice of half an orange. Stir gently. Cook for 8 minutes at 200C. Transfer the vegetables into a serving dish. Add tahini to remaining liquid in the tray and stir. Serve with sauteed bell pepper slices and roasted walnuts.
